Sweet Sicilian Traditions: Cannolo and Ricotta Panzerotto

“Our passion for baking is a serious business that goes back naturally 150 years, from father to son.” - Marcella

As tradition dictates, so too does the recipe: a piece of magic, a handful of smiles and a good dose of love for baking. This is a cooking class that will reveal all the secrets of preparing the best cannolo and ricotta panzerotto that there are.

Although Sicilian baking continues to renew itself today, the cannolo is still a ‘dolce’ that cannot be equalled, with which you will fall in love after one bite. After having listened to the story of this hundred-year old company and having visited their workshops, you will be ready to get your hands dirty with flour and sugar, smelling of marsala and cinnamon to create an experience of full immersion in the kitchen of a historic Sicilian family.

You will spend half a day being taught about taste and enjoyment, and discovering the traditional dolce recipe, which is emblematic of the whole of Sicily: cannolo. You will discover how ricotta, sugar, cinnamon and lemon rind all mix to form a deliciously indescribable cream, with which you yourselves will fill the wafer that you have previously made.

The historic “Cannolicchio” is one of the greatest classics with its uniquely Sicilian taste. Preparing it together with your partner, friends, children or grandchildren will create a magical bond, and a sensorial experience that will remain with you forever. You will explore a culinary culture that goes back for centuries from up close, based on the products from the island and the ancient traditions passed down from generation to generation.

In perfect Sicilian style, according to which you never stop at just one dish, you will continue to prepare another typical dolce, the ricotta panzerotto! You will have everything you need to prepare it, watching the phases of the creation of these unique products, and you will make your own to replicate the taste, consistency and kindness of this dolci, the product of an entirely Sicilian pride.

At the end of the cooking class, you will taste the products you have made, as well as the company’s specialities, and, before you head off home, they will be happy to gift you a recipe book to take all the secrets of their specialities with you.
